Making ganache is easier if you heat the whipping cream almost to a simmer and pour it over the chocolate. Stir well until combined. No double boiler necessary.

The glass plate changes the cooking time. Honestly the crust looks raw in the glass plate. Also your pastry cream has too much corn flour. I guess it gets looser with the whipped cream but it looked too solid. There are other ways to make pastry cream that will not result in lumps.
